These cookies are almost more like a baked oatmeal, but for me they read dessert, so I'm calling them cookies. Sue me :) The great part about them, though, is that they are free from refined sugar and get their slight maple flavor from a small amount of maple sugar (though you could use maple syrup, you'd just have to cut back on the cider so that they liquid to dry ingredients ratio is still intact).
