This recipe uses coconut oil to fry the banana, however if you are not lactose intolerant, frying in butter adds a nutty caramel taste to the dish. If you like your puddings sweeter, melt brown sugar in the butter before adding the banana. For those on a low FODMAP diet, make sure that the banana is not over ripe as this increases the fructose.
