  Chipotle Chicken Empanadas Ingredients 1 onion, diced fine 2 cloves of garlic, minced 2 cups cooked chicken, shredded 2 chipotle peppers in adobo sauce, minced + 1 T adobo sauce 1 tsp cumin powder 1 egg separated 1/4 cup grated queso (you can sub parmesan or other sharp, aged cheese) 2-3 T chopped coriander
