The summertime makes me want to eat lighter meals that feel fresh. I guess for me, that means a lot of Seafood, considering most of my posts lately have been just that! Seafood is a great summer staple. Here in the South, there is a lot of catfish available in the stores. If you don't have catfish near you, other fish can work too (tilapia, halibut, etc.) If you have catfish, but are afraid to try it, don't be! It tastes great and is a super easy fish to work with. This catfish recipe is super easy, but it does have some kick to it! If you aren't big on spice, just decrease some of the seasonings to suit your needs. It is very flavorful and the light fish and spices are great for summer. Serve with rice and veggies, or my Easy and Healthy Quinoa Tabbouleh .
