I went to the Organic farmers markets on Sunday in Marylebone London, and people were leaving the carrot tops behind. So the owner just gave them to me. I was over the moon! I knew exactly what to make of them. Pesto! I wanted to make a salad with Pesto dressing, and i knew i needed quiet a bit of pesto, so what better way than to experiment with carrot tops! This salad turned out amazingly delicious! I finished my first bowl and was really tempted to go for a second, but i knew if i left it for a while, the lentils and spelt would fill me up. Which they did in no time! I didn’t pick at food at all after this meal. Very nutritious and delicious. Don’t be put off with the amount of work, it seems like a lot, but if your organised you can do it all at the same time within 1 hour. Enjoy!
