At least once a week, we try to have some type of fish for dinner. During Lent, I always grew up and was raised with no meat on Fridays, and have also tried to continued this idea. One day, my fiance and I were at the store and found a fish called "swai" on sale. He decided to buy it. We did some research and found it was a kind of catfish (in the catfish family)! Neither of us had catfish before. I decided to try to make a chowder, because my fiance had been asking for some soup with this cold weather for a while. This chowder with the swai fish was so creamy, hearty, and flavorful! All the flavors ended up working together perfectly and it really warmed us up. We use the swai in this amazing soup, but tilapia, shrimp, crab, really many types of fish or shellfish would work. It goes great with a hearty bread, or you could try my cheddar bay biscuits. Whatever you wish, if you give this chowder a try, you won't be disappointed.
