When my brother ran cross country, he decided to be a vegan to improve his running. During that time, I was surprised to find tons of great vegetarian and vegan foods that tasted amazing! I discovered that "healthy" and "clean" eating do not have to be negative things. I have kept this Quinoa recipe, and many others, as a staple in my cooking routine because of just how refreshing and tasty they are! This recipe is great because you can add and subtract the veggies based on preference and/or what you have and it will still taste good!
