Grass fed beef has a rich flavor that depends upon the meat having taken on the “values” of the feed – mostly organic grasses. The result is low-fat beef which requires different cooking methods. The beef shoulder is not commonly offered for sale in chain-type grocery store meat departments. It’s cut into different roasts and ground for hamburger meat. Artisan beef – like that raised by Pat~N-Tam’s Beef is harvested and butchered by skilled butchers and this shoulder cut is available. Slow cooked it’s tender, flavorful and oh-so-easy to prepare at home.
