These soft, decadent vegan double chocolate chip cookies are like a fantastic cross between a cookie, a cake and a brownie. AND they’re whole-grain (with a gluten-free option) and packed with fiber (and moistness) from the beans to boot! I made mine with whole wheat and chocolate chips, but Kathy also includes gluten-free and oil-free options.
