I came up with this recipe a few weeks ago when I was daydreaming about Hostess Apple Pies with "Fruit Filling." I used to eat them when I was a kid and even though they were terrible for me, they were damn delicious. I have a BIG sweet tooth and that doesn't really mesh with the Paleo/Primal lifestyle. They say "everything in moderation," but that doesn't really translate. Treat yourself every once in a while, don't go overboard and try to use quality ingredients! You'll notice as I post more and more that a good amount of my inspiration comes from foods I loved in the past. I like the challenge of trying to "paleoify" a food, and not just to do it. I aim to recreate each dish with similar taste, texture and quality. If any of you are from the East Coast, you've been to a Dunkin Donuts once or a million times. A chain with fresh baked donuts, bitter mediocre coffee and little balls of fun called "Munchkins." Munchkins are bite size donuts that come in 3 different flavors, or they did at least when I was eating them years ago. Chocolate, Glazed & Jelly. This is where everything kind of came together. I wanted to recreate the Apple Pies into bite size donut bites. That's what I did here. Two notes I'd like to make are: the time of cooking will 100% depend on the size you make your bites. They will rise significantly during the baking process, make them smaller than you think you should. AND Originally, I was calling these Apple Pie Donut Bites. After many trial runs and a lot of friends eating them, I decided they are better served cold out of the refrigerator and are less like a donut at this point. Eat them hot for the donut-y outside crisp! Let's get them going!
