This crunchy salad is one of my favorite side dishes. In China, it is served as an appetizer to snack on with a drink or to go with kebabs. It’s also the perfect accompaniment to a piping hot stir-fry and rice. I always make enough to roll up in tortilla wraps with chicken for lunch the next day. -John Gregory-Smith
