This is a really fun recipe for anyone to try! It is an especially great dish for those who don't have much experience cooking with Organs. I just did a cooking demonstration at PALEO FX in Austin, TX two weeks ago and this is the dish I chose. More and more people have opened their eyes to the benefits of eating Offal. Nose to tail is something that should be in everyone's mind all the time. Food is expensive, we have to stop wasting the most nutritious parts! Beef Heart is a dense muscle with a higher nutrition content, along with more protein than all other steak cuts. In just 3 oz. of Beef Heart, there are 95 Calories, 15g Protein, and 3g Fat. It is a rich source of ALL B Vitamins except Folate. It contains 200% of your daily intake for B12. Heart contains all essential amino acids, as well as Zinc, Selenium, Phosphorous, Elastin, and Collagen. One of it's biggest claims to fame is the CoQ10. CoQ10 is essential for cell production as well as improving Cardiovascular function. It boosts energy levels, fights free radicals, and is absolutely vital for the immune system. Cutting down a Beef Heart for your first time can be time consuming, but, it is also a great experience that winds up being a lot of fun! When you have finished trimming down your heart, you will wind up with more trim than actual steak and that's OK! I watched this video about two years ago and I've seen it a dozen times since. It was my "how-to" before I first dissected a heart. Please take the time to watch. Ruhlman is an awesome home chef by the way. I'd love to cook a meal in his kitchen over some Scotch, haha. Just a note, the trimming and marinating of a beef heart can take between 2-3 hours.
