Scallion Pancakes

This is another dish that I had at one of my favorite restaurants in Chinatown in Philadelphia. The place was called Jade Harbor. It usually opened late in the evening and stayed open until 2 or 3am. Back in my early 20's...dang, that was a long time ago! Back in my early 20's, my best friends and I would be bored at night, and randomly take the drive to Philly to go find our favorite late night munchies. We randomly stumbled upon Jade Harbor one late night. It could be 2am and the tables were full and the kitchen was rocking! They also had a full bar which every patron seemed to utilize. My friends and I usually went with Remy XO cause it was like $8 a drink, which is badass. Anyways, our favorite appetizer to start out with was Scallion Pancakes. We would get two orders and they would be gone pretty quickly. Crispy, oily pancakes, filled with green onions and a perfect salty dipping sauce on the side. There weren't many things Paleo or Primal about this dish. Flour, soy oil, soy based sauce, sugar....who cares? I didn't. I ate whatever I wanted. Not anymore though! I HAD to Primalize this dish. After a ton of messing around in the kitchen, I came up with a winner for the pancake recipe. Added in the Scallions and they seemed perfect. I worked really hard on a recipe that was Gluten, Grain, and Dairy Free! The sauce I came up with just messing around with ingredients. It balances perfectly with the pancakes. These are TOO easy to nom on quickly...so make 2 batches!! :)
