It's almost time for Cinco de Mayo, so it's time to practice my Mexican cooking! Well, this isn't really "cooking", there's no heating in this recipe.  But it's simple to make, and is a nice alternative to traditional tomato-based salsas.  It's also a great sauce for chicken enchiladas.  Or seafood enchiladas.  Or...my imagination is starting
