My first vegetable recipe up on the blog and it couldn't be an easier one! If you haven't gotten the chance to snag these at your grocery store or co op, check your local Farmer's Market. Costata Romanesco Zucchini is an Italian heirloom summer squash. I was first introduced to this variation of Squash from my local, organic farm, Suzie's Farm. It's very crisp and has an especially nutty flavor. It is preferred in many kitchens due to it's aesthetics and texture. It also tastes great either roasted or sautéed, with just a bit of salt, pepper, and garlic. The best part is that it can be served on the side with almost any entree or just eaten straight off the plate! I chose to use Beef Tallow for this dish but you can use any cooking medium(Avocado Oil, Ghee, Duck Fat, Coconut Oil).
