I keep going off on these random cooking tangents writing new recipes out of the blue! I've had tons of recipes written and ready to finalize for months, but I keep getting bursts of inspiration elsewhere! ...And here we go again! I have to give credit to my Mom for this recipe. She made this recipe all the time when I was a kid. It was a great alternative to the all too boring Mashed Potatoes. I also HATED traditional Potato Salad. I thought it was bland and always had way toooo much mayo. I will always remember the big, yet soft chunks of Potatoes, Crispy Bacon pieces, and a strong Vinegar taste. It was a perfect mouthful. To make this new dish more "Paleo Friendly," I used Parsnips in place of Potatoes. The Parsnip is a root vegetable and in the same family as Celery, Carrots, and Parsley. Parsnips contain a wide variety of vitamins, minerals and nutrients, including dietary fiber, folate, potassium and Vitamin C. Cool note about Parsnips is that they were used as a source for Sugar before Sugar Cane & Beet were available. I chose to add in a touch of Ghee to do this dish. Please remember this is optional and without the Ghee, it is completely DAIRY FREE! I'd be lying if I didn't tell you that it's almost impossible to stop eating this once you start!
