I admit that these Vietnamese Summer Rolls can be tricky to assemble, but practice makes perfect.  Below, I give directions that hopefully make things straightforward. It's sort of like making crepes... the first one never turns out (and you eat it right away :)) Make sure not to overfill the rolls and immediately cover them
