San Diego is the heart of delicious, but super unhealthy Mexican food in California. There are taco shops up and down every street and on every corner. They are open early at 6am and stay open serving late drinks till 3am. When I first moved to San Diego, I couldn't help but devour burritos, rolled tacos, and tamales on a weekly, and sometimes daily basis. The food was authentic and delicious. Most shops have an elderly woman in front hand-making tortillas. One thing that I always noticed in each shop was a little tortilla chip bar set up with four to six different salsas....a dream for me! I love spicy salsas! Could these shops really be making this many different kinds of homemade salsa? Uhmmm...hell no! None of em! They all use canned salsas to keep up with volume. As much as people in San Diego love their Mexican food, they love just as much salsa to go along with it! I knew it was simple to make a really good, spicy or not spicy homemade salsa with minimal ingredients. It took two tries and I got two different batches with two different levels of heat. One batch I used Jalapeños and the other was with Serranos. The serrano salsa was a lot hotter! This salsa will go well with almost any protein, fish, eggs or scrambles....and actually it's pretty damned delicious straight out of the jar! Hope you all enjoy it!
