Whenever I get the spontaneous urge to make a pizza or bake some bread, I always find that I have run out of yeast, or the yeast I do have is way past expiry. So I tried making a yeast-free pizza dough, and, surprise surprise, it was delicious ??? and so quick to make! Because the dough doesn’t need time to prove or rise, you can make spur of the moment pizzas, or simply sprinkle with oil, salt and rosemary and you’ll have a yummy focaccia. Homemade pizza (with homemade dough) is one of my favourite meals. As a kid, I loved that each member of the family could have their own individual pizza, tailor-made with their own favourite toppings. Get the kids involved in the kneading, and set them up with a selection of ingredients so they can add their own toppings. No leftovers, guaranteed! This recipe yields one large (family-sized) pizza, or two smaller (25cm) pizzas.
