It has been forever since I made a gingersnap cookie. Whenever I make gluten free cookies for my family I normally make chocolate chip or sugar cookies.  Recently I decided to switch things up and make gluten free gingersnaps. I tend to only make these around Christmas or Thanksgiving, I don't know why because they are yummy regardless
