Immerse pork spareribs (1 lb) in cold water for 15min, drain, re-add water and boil ribs with ginger (3 slice), green onion (2 stalk), start anise (2, optional), salt (1 pinch) into a pot (~ 2Qt) for 30 mins. Finely chopped hot peppers (a handful), add salt (1t), stir fry it in oil (1T) over medium heat for 5 mins. Place cellophane noodle in the bottom of a large bowl, add ribs, then drizzle stir-fried hot pepper over the top. Steam for 20 mins. Done!
