I almost hesitate writing an apple butter recipe because you can do this in so many ways, with different amounts of each ingredient. The key to this is to taste it as you go along. Tart apples may require more sugar. Maybe you like less cinnamon. Do your thing. Your thing will work. Apple butter can't be bad.
