In a grill pan, cook the meat under med-high heat, until meat is cooked through. Let it sit before slicing, approx. 20 min. Dump in all the ingredients for the marinade and give them a whirl. I like to serve this alongside a serving of whole grains (according to the 2010 Dietary Guidelines for Americans, people above the age of 9 should consume 3-5 servings per day..1 serving = 1/2 cup of cooked whole grains, 1 slice of bread, or 1 cup of cereal) and some vegetables on the side.   So what to do with all the leftover chicken?  While there are endless possibilities, come back and see how I transform them into tacos and a soup!
