The best way to make these is with the boneless pork spare ribs. You can also buy a 5 lb pork shoulder with or without the bone and cut it into cubes. Dale prefers the flavor of the spareribs because it has juicy fat which is where the flavor resides. The fat helps aid the cooking and keeps the meat tender.
