Chicken Fajitas (Oven Baked)
I’m a HUGE fan of Mexican food, and whenever we go out, I’m usually craving some chicken fajitas.  That enticingly smokey aroma that wafts through the whole restaurant as the waiter carries out your sizzling platter of deliciousness… *drools*.  When I found this recipe, I’ll admit I was skeptical… fajitas cooked in the oven?  Hmmm, it didn’t seem like it would work out well.  Whew, was I ever wrong!  These oven baked chicken fajitas were ahhhh-mazing and ridiculously simple! All there is to it is to slice your chicken into strips, slice your peppers and onions, toss them all in a 13×9 baking dish with oil and spices, and bake them.  That’s it!  I haven’t made this with steak, but I think that may work as well  Also, you could completely omit the meat and have some veggie fajitas… mmmmmm! Admittedly, I’ve never made chicken fajitas the “traditional” way before.  It’s always been on my food bucket list, but somehow I was always intimidated to try making them.  Maybe it’s because I consider them “restaurant kind of food”, and therefore, complicated.  I’m a big perfectionist, and if I think I can’t make something that’s up to my standards, I have a hard time trying to make it in the first place.  It sucks, but alas, it’s how I am lol.  After coming across this original recipe on Pinterest, I knew I had to try it.  And now that I’ve made these chicken fajitas, I doubt I’ll even try the “traditional” way.  These. Are. Just. That. Good!  I believe they will be on our dinner rotation for quite a while.  You know it’s a good recipe when your 5 year old asks for seconds  That’s part of the beauty of this recipe… the seasoning has quite a few ingredients in it, but these chicken fajitas are not spicy and hot… just amazingly flavorful! Author: The Chunky Chef Recipe type: Entree Cuisine: Mexican Serves: 4 servings Ingredients 2 small yellow onion sliced 1 medium green bell peppers sliced 2 medium red bell peppers sliced 1 lb chicken breasts sliced into strips 2 Tbsp vegetable oil 1 medium lime juiced 8 6-inch flour tortillas sour cream optional fresh cilantro chopped, optional SEASONING 1 Tbsp chili powder ½ Tbsp paprika ½ tsp onion powder ¼ tsp garlic powder ¼ tsp cumin ⅛ tsp cayenne pepper 1 tsp sugar ½ tsp salt ½ Tbsp corn starch Instructions Preheat the oven to 400 degrees. Mix all of the ingredients for the fajita seasoning in a bowl and set aside. Cut the onion and bell peppers into strips. Place them in a large 13x9 baking dish. Slice the chicken breast into thin strips and add it to the baking dish with the vegetables. Sprinkle the seasoning over the meat and vegetables. Drizzle the vegetable oil over everything and then use your hands to toss the ingredients until they are well coated. Bake for 35-40 minutes, stirring once half way through. Squeeze the juice from half of the lime over top of the baking dish once it's baked.
