If you have cheese leftover from a cheese tray, this is the thing to make! Potted Cheese is a classic English spread that takes random leftover bits of cheese, mixes them together and turns them into something new and delicious. My cheese trays during the holiday season tend to contain Brie, Cheddar and a blue cheese like Stilton and so these are the cheeses that I have suggested. But use what you have and then taste and adjust seasonings accordingly before spooning it into the ramekins. Because the Columbia Crest Grand Estates Merlot is so very cheese-friendly with its aromas of chocolate and cherries and dark fruit flavors, I’ve added some to the potted cheese mixture. And I suggest that you serve the wine alongside the potted cheese as well.
