I must admit, I do not have much to say about these Carrot Ginger Cupcakes With Cream Cheese Icing.  Except – good golly Miss Molly – they are FANTASTIC. These have a double hit of ginger in them – both crystallized and ground – to pack a flavour punch without smacking you in the face.
