Gooey melted cheese on buttered toasted bread with the famed Indian green chutney and a slew of vegetables. Then, a smattering of ground spices takes this “street” sandwich to another level. You will keep wanting to make this over and over, no matter what time of year. It’s no wonder it’s so famous in Bombay; I had to re-create it. I don’t use Amul cheese even though I can find it in the Indian stores here. I just prefer un-processed cheese. A good substitute is white cheddar and an even milder option is Provolone.
