I’m so chuffed with these blueberry and ricotta wholewheat pancakes. Honestly, I'm so very over the moon with them. My feelings on wholewheat pancakes have been turned on their head since developing my own recipe - one which incorporates some plump, juicy blueberries, a creamy ricotta cheese and a divine blueberry compote. Oh yes, these
