Hello my friends!
I hope you are having a wonderful week! So far things have been great around here...the kids are back to school and are enjoying it so much. My youngest is off to preschool, and I'm back to a regular blogging schedule which is a relief for me. Summer was a challenge with trying to keep my blog going while at the same time taking time to enjoy the summer with my kids. But now that everyone is back to their scheduled activities, I am back at it! So things are moving along quite swimmingly. Feeling blessed.
And feeling bake-y. Is that even a word? I think not. But I've got my bake on and I'm loving that! With the kids back at school, I like to be able to send homemade goodies in their lunches...it makes me feel good to do that for them, and I know that they are enjoying it too! So it's the perfect excuse to get in the kitchen and get baking!
One of our staple goodies around here is banana bread. Like it is for many of you I'm sure, banana bread is a family favourite. So when we decided to try to eat wheat free 80% of the time I had to find a recipe that worked (and this has been a challenge let me tell you...wheat free baking is hard). You may remember the Wheat Free Cinnamon Chocolate Chip Banana Bread I made previously...while it is delicious, it is a bit more work than this recipe.
This banana bread recipe is very, very simple, and has the taste and texture of regular banana bread. (I actually just tweaked my regular banana bread recipe and it worked!). Whew. I can't even tell you how happy this makes all of us feel! ;)
