This year my husband and I have decided to get out of our same old same old recipe rut, and venture out. This means that we are going to try to use a new recipe at least once a week. So to start, this weekend we tried this new pancake recipe for Ricotta Oat Bran Pancakes. I know, right. Shocking. We always have the same pancakes.

And wouldn't you know it? This is my most favourite pancake recipe ever. Ok, maybe next to peanut butter pancakes, but these are a very very very close second! So so good. Mouthwatering yumminess!

Ricotta Oat Bran Pancakes
Ingredients
1 cup whole wheat flour
3/4 cup oat bran
1/4 cup brown sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
2 eggs
1 cup ricotta cheese
1 cup milk
1 tsp vanilla
1/4 cup canola oil
Instructions
Mix flour, oat bran, sugar, baking powder, soda and salt.
Whisk eggs in a bowl. Then add ricotta cheese, milk, vanilla and oil.
Combine flour mix and cheese mix. Stir until just blended.
Scoop about 1/4 cup batter onto a preheated griddle.
Notes
I like to cut down on all purpose flour, so I often make these with 1/2 cup all purpose flour, and 1/2 cup oat flour. They taste just as delicious!
