I loved the flavours of lemongrass. This dish was inspired by my travels to the exotic land of Thailand. It brings back memories of, the exotic, warm, and spicy flavours of Thai cuisine and culture. Eddoes are commonly referred as taro, is a starch root, similar to yam and has an interesting nutty flavor with a combination of waterchesnut, potato and artichoke flavors. It is great in soups or stews. In the Asian culture this is also the main provision staple.
