"Taste like Summer!" was Wisket's first response. Peaches, fresh mozzarella, mint, and balsamic reduction. Oh, and it is SO good!! It came about because peaches were on sale, although I thought I was purchasing them for a cobbler. I got home and it hit me to try them with the fresh mozzarella instead of tomatoes.
