In a week, I made them twice. And each time, next day, I wanted to eat them again. The second time I made these, I decided to fry them straight away without the rest time but I would suggest that you wait out the rest the time. Just roll out all the doughnuts, give them a 20 minutes rest and then carefully start frying them in the order you rolled them out. They will be very puffy and difficult to transfer to the oil but the extra effort will pay off in lighter, fluffier dougnuts. They are best eaten immediately. But I promise, you won't complain even after they cool down.
