I love using roasted beets in pasta and salads. They add a nice amount of sweetness to the dish. Here's a simple, mess-free and easy way to roast beets. Start by preheating oven to 425°F. You'll need about 4-5 medium beets.  Trim off the root ends and wash the beets.Place each beet in 3 layers
