There's no specific measurements for making chicken broth. Make as much or as little as you like. Generally, for 2-3 pounds of chicken, I use 5 or 6 carrots and celery stalks, and one large onion. Add herbs according to your taste. More water makes a less concentrated broth. Experiment! You can't "mess this up". When you're ready to use your broth, you can either take it out early and refrigerate until it is thawed, or, if you forget, it thaws surprisingly quickly in a dish of warm water. Just be sure to use it right away if you choose to thaw it quickly.
