This Aubergine Cheesecake has to count as one of my finds of the year. I originally made a version of this dish for the Cheese issue of the Sunday Times Food Weekly in April of this year.  The issue coincided with the annual South African Cheese Festival and I loved creating and photographing 6 dishes
