I remember the first time I had carrot cake.  It was actually a paleo recipe from Make It Paleo by Bill Staley and Haley Mason.  It was delicious, and I have been in love ever since.  I loved the idea of putting a vegetable in dessert.  It practically makes it a salad. I've had carrot cake
