This easy and delicious potato salad is perfect for pot lucks, backyard bbq's, office parties, and more! For father's day this year we're spending some time with my mom's family and participating in a pot luck lunch.  I love pot lucks.  They just satisfy my need to never show up empty handed to someone's home.
