I can assure you, I haven’t lived under a rock, but Mexican chicken soup was new to me. Mexican food generally served in US restaurants is loaded with cheese, there is nothing wrong with cheese and I really love cheese (maybe a bit too much). Unfortunately, at the beginning of the year with healthy food on my
