I love portobello mushrooms.  They are fantastic grilled or seared.  I love the way they look, the way they smell on a skillet, the way they shine in a creamy pasta dish.  In general, mushrooms are complex.  I never knew a lot about them, until I started cooking.  Now.......I'm hooked.
