Ingredients for Apricot Couscous 1/2 cup pine nuts 10 oz. couscous 2 cups water 1/2 tsp. salt 1 Tbsp. olive oil 1 shallot, diced 1/2 cup dried apricot, chopped 2 tbsp. chopped parsley In a pan over medium heat toast pine nuts for 3-4 minutes, stirring often. Remove from pan and set aside to cool.
