The Kentucky Derby is this weekend, so in preparation we're making a key Southern staple, pimento cheese dip.  It's actually pretty simple. One key we found to making the best pimento cheese dip is to grate your own cheese. Do not buy pre-grated cheese! We already tried it and the texture is not the same.
