Have you ever made a Hasselback potato?  The original recipe is Scandinavian in origin, and are usually prepared with russet potatoes.  For my Caribbean Grilling Menu, I made Hasselback potatoes using sweet potatoes, and to give the potatoes a little Caribbean flair, I added vanilla sugar mixed with nutmeg & allspice to the sweet potatoes
