I'm vegan, but I do love a creamy sauce! I see a lot of cauliflower cream sauces (a little too light) and a lot of cashew cream sauces (a little too heavy) on the internet. This yummy, dreamy sauce makes good use of silken (soft) tofu, although the recipe includes a few cashews to up the fat and provide a little body. No cutting cauliflower, which can be messy. No soaking cashews, which can be time consuming. Just blend and go!
