A light and tender cake, flavored with lemon and olive oil. For an extra flavor surprise serve with basil infused whipped cream and fresh berries. Use either regular olive oil or extra virgin for this recipe. Extra virgin olive oil provides a slightly stronger olive oil flavor. I like to use a combination of ½ cup extra virgin olive oil and ¼ cup light olive oil.
