Mexican Street Corn, also known as Elote, is a popular Mexican street food that consists of grilled corn that's been slathered with various toppings. In this case, I cut the corn off the cob and mixed it with mayonnaise, lime juice and zest, chili powder and cheese. It's absolutely delicious! It's a wonderful side dish
