If you’re anything like me… my favorite meals tend to be Pasta or Mexican. You just can’t go wrong! I used to make a Buffalo Chicken Pasta (which was oh so yummy), but I’m trying to lighten things up these days and introduce vegetables to my little guy as often as I can. Cauliflower tends to take on the taste of the items surrounding it, which is superb! This casserole does not taste like it’s mostly veggies… it’s a cheesy, gooey, awesomeness. Please try the pasta version as well though! Just sub the Cauliflower for 16 ounces of your favorite pasta! Or even better, add the pasta AND Cauliflower (double the Greek Yogurt too) to create a Pasta-Veggie-Chicken Casserole delight! Enjoy and Happy Cooking!
