Smokey Pulled Pork Enchiladas were Patti’s brainstorm after Ken came home with a huge piece of pork. Ken had lots of great ideas, but Patti wanted Mexican and we both love enchiladas. With Ken’s famous smoked pulled pork and just a few other ingredients we made a great meal with lots and lots of layers of flavors. With the added smoke box on the Pacific Living Outdoor oven and the Pacific Pellet Rancher’s Mesquite pellets added even more of the yum factor.
