I almost didn't post this recipe. I am not much of a veggie eater and substituting sweet potatoes for this cake.but since I have lately had a hard time getting my socks on without huffing and puffing, I thought, what did I have to lose? Besides weight, that is. It was very moist, almost as if I didn't cook it long enough. This is GLUTEN FREE ladies and I think you will like it.
